Change in living room and out to eat.
I prepared everything today to make the chicken but then decided not to make it. I guess I was tired. See we did change our whole living room around today. We had an old sofa that needed replacing so we switch it out with another. Now I believe there is more room in our living room. I am very pleased with it.
We also had to reorganize Daniel's room. Do you know how many toys this kid has? Just the thought that is birthday is right around the corner makes me cringe. I dont want him to get any more toys. I think he is set for a long time. But yet, he still gets more. Yesterday we went to McDonalds and yet and behold, he got a new toy: Captain America, I believe. Another toy that takes up more space in the closet. Regardless how little it is, it accumulates time after time. This kid loves McDonalds just for the toys that they have.
Of course Jocelyn had to have a toy too. She saw Daniel get a toy and started yelling at Daniel and trying to get his toy. So off I went to get her a little petshop toy. She got a little bird in a basket. She loved that thing right away. She screamed at Daniel when he tried to look at it. She held on it even when we arrived at church. She nursed to sleep and still had it in her hands. Her first McDonalds toy. Also has bad as that sounds, she had her first bites of a cheeseburger and apples.

Pool Day & Fajita night
So we have this little pool that we bought a couple years ago and Daniel found it in the garage today. Guess what I had to inflate? I have a hand held air pump that didnt work today with the pool. I had to air blow the entire pool and toys by myself. Do you know hard that was? I wont ever attempt that again, thats for sure.
Well, I guess the outcome was great though and well worth it at the end. The kids played in pool. Daniel was more interested in filling up the pool then anything else. He did go down the slide though.
Jocelyn loves the water so she enjoyed it. She even attempted to drink the water. She is so hilarious. She cried when it was time to get out like she does when she needs to get out of the bathtub. This girl is a little fish. I swear I dont know how she doesnt have gills.

We ate fajitas today with steak and chicken. It was very good. No recipe because I think everyone knows how to make them.
Jocelyn munched on shredded cheese, chicken, and tomatoes. She loves finger foods. She also love the dessert: cookies and milk.

Indian Food
So I thought it would be a nice twist to have an Indian night since its been a very long time since I did Indian food.
Heres what I did:
Tandoori Chicken
Ingredients
* 1/2 teaspoon curry powder
* 1/2 teaspoon red pepper flakes
* 1/2 teaspoon kosher salt
* 1/4 teaspoon ground ginger
* 1/4 teaspoon paprika
* 1/4 teaspoon ground cinnamon
* 1/4 teaspoon ground turmeric
* 2 tablespoons water
* 2 tablespoons of sour cream
* 4 skinless, boneless chicken breast halves
Directions
1. Preheat grill for high heat.
2. In a medium bowl, mix curry powder, red pepper flakes, salt, ginger, paprika, cinnamon, and turmeric with water to form a smooth paste. Rub paste into chicken breasts and massage sour cream on. Cover, and allow to marinate for 20 minutes.
3. Brush grate with oil. Place chicken on the grill, and cook 6 to 8 minutes on each side, until juices run clear when pierced with a fork.
Naan Indian Bread
Ingredients
* 1 (.25 ounce) package active dry yeast
* 1 cup warm water
* 1/4 cup white sugar
* 3 tablespoons milk
* 1 egg, beaten
* 2 teaspoons salt
* 4 1/2 cups bread flour
* 1 teaspoon garlic powder
* 1/4 cup butter, melted
Directions
1. In a large bowl, dissolve yeast in warm water. Let stand about 10 minutes, until frothy. Stir in sugar, milk, egg, salt, and enough flour to make a soft dough. Knead for 6 to 8 minutes on a lightly floured surface, or until smooth. Place dough in a well oiled bowl, cover with a damp cloth, and set aside to rise. Let it rise 1 hour, until the dough has doubled in volume.
2. Punch down dough, and knead in garlic. Pinch off small handfuls of dough about the size of a golf ball. Roll into balls, and place on a tray. Cover with a towel, and allow to rise until doubled in size, about 30 minutes.
3. During the second rising, preheat grill to high heat.
4. At grill side, roll one ball of dough out into a thin circle. Lightly oil grill. Place dough on grill, and cook for 2 to 3 minutes, or until puffy and lightly browned. Brush uncooked side with butter, and turn over. Brush cooked side with butter, and cook until browned, another 2 to 4 minutes. Remove from grill, and continue the process until all the naan has been prepared.
Indian Rice
Ingredients
* 3 tablespoons butter or margarine
* 1/4 cup diced onion
* 1 cup uncooked long grain white rice
* 2 cups water
* 1/2 teaspoon dried parsley flakes
* Goya Seasoning packet
* pinch of cinnamon & curry
Directions
1. Melt butter or margarine in a medium, non-stick pot over medium heat. Cook and stir onion until golden. Add rice, and stir to coat. Stir in water, parsley flakes, saffron, Goya seasoning packet, cinnamon & curry powder. Reduce heat, cover, and simmer for 20 minutes.
I didnt take pictures but over all, I think it turned out ok. Danny liked it but I dont think I will be making this chicken recipe nor rice again. I think the best thing was the Naan. Daniel loved it. I used all-purpose flour though since thats what I only had on hand and it was a little more dense but still tasted great.

I guess, I'm tired of everyday saying what are we going to eat? So I planned a weekly menu this week. So far its exciting to plan out it all out. I'm currently only doing dinner right now. I planned the menu from Monday through Saturday. Sunday is my rest day and we usually go out to eat.
So here's my weekly menu:
Monday Tandoori Chicken, Saffron Indian Rice, & Naan Indian Bread
Tuesday Chicken & Steak Fajitas with peppers & onions along with Tortilla chips & pico de gallo
Wednesday BBQ chicken, baked potato, corn, & Baked mac n cheese
Thursday Grilled Peach Glaze Ham steaks, brown rice & roasted brown sugar carrots
Friday Sloppy Joes, potato salad
Saturday Chicken Parmesan, penne with Vodka sauce, peas & peppers, and garlic bread
